Lion’s mane, also known as hedgehog mushroom, grows wild in North Carolina, but we get ours from our pals at Urban Gourmet Farms! This mushroom has a sweet/mild flavor, reminiscent of crab or lobster. We sauté it gently in EVOO with a little fresh garlic, sea salt and black pepper. Fabulous on tacos, on top of salads, or with pasta, this mushroom offers a number of nootropic benefits – it is beneficial for cognitive function and nerve regeneration, and is potentially beneficial for those suffering from dementia, multiple sclerosis, Parkinson’s, peripheral neuropathy, seizures, anxiety, depression, and muscle cramps and spasms.
