To celebrate fall and the cool weather, we're baking you a warm, colorful and delicious lasagna. We will sauté Butternut Squash and fresh greens, layer them with cashew ricotta, roasted onions and broccoli, and top everything with lovely roasted tomatoes. You may choose brown rice noodles, or Zoodles (zucchini noodles) for a grain-free option. Each piece gets a sprinkle of Cashew Parmesan and includes a heap of Tomato Caprese Chickpea Salad on the side. Savor each bite!
