We sure do dig Ranch Dressin' around here. And apparently we aren't alone - it's known to be the most popular salad dressing in America!
Of course, we don't make ours from mayonnaise and sour cream or any of that cholesterol-laden nonsense. A cashew base is perfectly creamy and delicious, and much healthier for you!
This is the Ranch Chef makes when she's entertaining - a little thicker and sweeter than the usual Ravishing Ranch you'd find on the Nourish menu. Not a fan of nuts? Use soaked Sunflower seeds in their place! But your dressing might not be quite as smooth, just so ya know.
Cashew Ranch Dressin'
makes 2 cups
1 1/2 cup raw cashew pieces soaked overnight, plus 1/2 cup filtered water
Juice of 1 lemon
4-5 tablespoons pickle juice
4 cloves garlic, minced
Miso, small pinch
Ground mustard, pinch
1 tablespoon nutritional yeast (optional)
Handful each : fresh parsley, dill, scallion
Tons of freshly ground black pepper
Throw the first 6 ingredients in the blender (high speed preferred) and blend until smooth. Add your yeast (if using) minced herbs, and black pepper, and pulse a few times to mix.
Chill for an hour or so before serving, to let the flavors mellow and blend. Enjoy! Keeps up to a month in the fridge.
